Early Food Friday Edition: Slow Cooker Pork and Brownie-Split Sundae

I know it's a day early but I really wanted to share this evening's meal with you. 

For the main course, I did quartered potatoes and pork tenderloin in the slow cooker. Added some spices, something of a marinade, and water, then had it in there for 6 hours. 
This is great if you're having a really busy day or you just want a nice juicy piece of pork ready. All I did after lunch was throw it in. 

For dessert I had my version of a brownie-split sundae. The best part of how I did this is portion-sizing. Using a mini-cupcake pan to put the brownie batter in, I created bite sized individual brownies without the mess or hassle of cutting everything afterwards. Then I used a food processor to purée up some strawberries and some mangoes. When the brownies were cooked and cooled, I placed them in small appetizer spoons, put a dollop of ice cream on two brownies, and the purée on top. 

The sauce and spice for the pork and potatoes took maybe five minutes. The peas I just steamed for 3 minutes once the pork was finished. 

All I used for dessert was a simple brownie recipe that took 30 minutes total, from prep to bake. Then the purées I placed in bowls with lids that can be refrigerated for future use :). 



The only hassle was the cleanup - but that is what a dishwasher is for. This ended up being a very healthy dinner followed by a portion-controlled dessert that can be made any way you'd like it.
