A Millennial Choice

So technically, as I was born in 1986, I am considered of the 'Millennial' generation.
There are a ton of descriptors and stereotypes placed on this specific generation, and there are definitely some characteristics I do identify with, but a great many more that I would not characterize myself as. Then again, it is based more on how other people see me, so I really don't know for sure if other people consider me in this stereotypical generation.

What I DO know is that there has been this obsession with 'Avocado Toast' over the last year among Millennials.
While I wouldn't pay $15 for it at a restaurant, this food is actually a great choice when needing IBD-friendly options.

Last night, after trying to eat half of a Monte Cristo sandwich (with the ham removed and given to Dex), I spent 7 hours in writhing pain and cramping and exhibiting horrible symptoms similar to food poisoning, but just from my Crohn's Disease. So today I had Boost for breakfast, Boost for lunch (which means I felt pretty well today - enough to finish Christmas shopping!!!) - and I have now relented and made a Millennial decision to have avocado toast. It *should* only cause mild pain and cramping and I shouldn't exhibit the same symptoms, as this meal has worked in previous weeks.

So I mixed an avocado with a touch of mayo and some light seasoning, overtop of rye bread toasted with parmesan cheese, topped with a balsamic reduction.
I hate to admit it, but it is damn delicious.
